Has this happened to you: You get invited to a potluck or an office party and have no idea what to bring? You need something quick and simple right? Or maybe it is Thanksgiving and you are told to bring dessert. You want to impress your friends/family/co-workers but both time and money is tight. What to do? Simple.

This recipe is so easy yet folks will think it took you all day to make. As far as cost goes, all the ingredients ran me about six dollars.
Plus, because there are so many flavors and colors of JELL-O the number of different combinations is…well…A LOT!
(HINT: Think red/green for Christmas or blue for Hanukkah or blue/orange for the Chicago Bears or ??? although I believe three to four colors is best.)

INGREDIENTS:

4 small boxes of JELL-O (3 oz), different colors
1 can (14 oz) sweetened condensed milk
2 envelopes (1/4 oz each) Knox unflavored gelatin
6 cups of water

Dissolve each box of JELL-O with one cup of boiling water. Sure, the directions say differently but trust me on this. Just use one cup of water. The JELL-O will set up firmer that way. Chill your mixture in the refrigerator for about four hours or until firm.

PRO-TIP: Pour your mixes into your food storage container or whatever you are using while your water boils then pour the water over the powder. Just saves a little time by multi-tasking.

Sprinkle two envelopes of Knox unflavored gelatin into 1/2 cup of cold water. When the gelatin has bloomed, dissolve by adding and gently stirring 1+1/2 cup of boiling water. Add the condensed milk and set aside to cool.
(Blooming is to allow the gelatin to swell as it absorbs all the liquid. Should take about three minutes in this case.)

PRO-TIP: Do this gelatin step before the following steps to allow the milk mixture time to cool.

Cut your firm JELL-O mixes into little squares.

PRO-TIP: Size doesn’t matter yet shoot for something around the size of a die. This is no time to be anal retentive. Better they are not all exactly the same size anyway.

Place your cubes into a 9X13 pan.

Gently mix up the cubes and try for a even top.

Pour your milk mixture over your JELL-O and chill overnight.

PRO-TIP: Make sure the milk mixture is cool or it will soften the JELL-O. Take your time pouring the mixture to avoid creating bubble. Having small bubbles is not a big deal but they may not pop during the chilling process and your dessert will look a little better without the bubbles.

Once your mixture is fully set, cut into blocks or shapes. Enjoy.

PRO-TIP: Serve the broken glass JELL-O cubes in appropriate sized cupcake papers.

Recipe Notes

Pro-Tip: Although the directions on the side of the box will say differently, just use one cup of water for the JELL-O. The JELL-O will set up firmer that way.
